A Creamy Soup for Weight Loss Success
In a TikTok video, I, Hannah Burrow (@hannahkburrow), revealed how to make this easy and satisfying meal. With over 175 pounds lost, this crockpot soup has been one of my favorites. Not only is it quick and easy to make, but it’s also packed with protein and low in carbs.
To start, add two or three chicken breasts to your crockpot. If using thawed chicken, the cooking time can be reduced by about an hour. Then, pour in one cup of chicken broth and a cup of hot sauce or buffalo sauce. For flavor, add a packet of ranch seasoning, one onion, two large diced carrots, and a stick of celery. Season with a teaspoon of dill, a teaspoon of garlic powder, salt, and pepper.
Simmering and Enhancing the Flavor
Cover the crockpot and cook on high for four to five hours. Once the chicken is cooked through, shred it and add half a cup of chicken broth, a block of low-fat cream cheese, and three-quarter cups of Greek yogurt. While the yogurt is optional, it adds extra protein and makes the soup creamier. For a touch of spice, stir in a third cup of diced pickled jalapenos and a quarter cup of pickled jalapeno juice. I prefer using tamed peppers for just the right amount of heat.
Let the soup simmer for another 30 minutes to an hour on a low setting. When serving, sprinkle blue cheese crumbles on top for an added burst of flavor. This soup not only tastes amazing but also provides a healthy dose of protein. Plus, it keeps well for the next day, making it an ideal make-ahead meal.
