He believes that school kitchens are Britain’s biggest restaurant chain, serving up five million meals a day. If professional chefs were asked to go to a secondary school for a day and serve 1,400 covers in 50 minutes, most would end up in tears. It is a challenging task, and school lunch staff do an incredible job.
